Cleaver

$2,000.00

This is a full sized, very thin, and light cleaver (or Chinese cleaver, or Chinese chef’s knife or Cai Dao). To me it is really a slicer and not a cleaver at all, but cleaver remains the easiest thing to call this style of knife. The blade is mirror polished and acid etched Damasteel stainless damascus.

Please note that this knife is right-handed. The compound grind is on the right side only, and the finger notch is also rounded off on the right side.

The handle is oval in cross section. It is carved from Elforyn Super Tusk and polished to a high gloss. This is a lovely synthetic ivory material which has a subtle and natural pattern. The fluting is in a gradual twist pattern that I think of as a “Fibonacci Twist” because that’s the number sequence I used to lay it out. The ferrule and end caps are satin nickel-silver and Garolite to contrast the color and sheen of the handle.
