Chef's Knife

$475.00

This knife has a somewhat thin blade overall, just under 3mm, slightly on the tall side at the heel, a gentle curvature to the cutting edge, and a dropped spine. This blade is not forged, there is some texture left on from the heat-treating process to maximize the thickness, and the logo was hot stamped. The blade is belt finished with a highly polished spine and choil. The grind is convex, and like most of the knives in this batch it is more convex near the heel and increasingly thin behind the edge further toward the tip. The handle is what I would consider medium-to-large and round in cross section, made from a particularly lively piece of stabilized ash. Another unique feature of this knife is the ferrule, which is made from custom made nickel-aluminium bronze. It is supposed to be tarnish and abrasion resistant. I can definitely attest to the abrasion resistant part, this stuff was a bear to work with!
