Chef's Knife

$500.00

This is a tall knife with a fairly thin blade overall, a versatile convex grind, and a belt finish with mirror polished choil and spine. It is, to me, in the cleaver-chef’s knife spectrum, but more on the chef’s knife side, and kind of reminds me of a Bowie. The lightly curved cutting edge is optimized for push cutting, generally speaking, and the spine is dropped dramatically to keep the edge more in line with the handle and provide a fine tip. The handle is full sized and round in cross-section, like a cleaver handle but with a series of narrow facets, and is heirloom fit to a copper ferrule. As a side note, some of the finish from heat treating has been left on to keep as much thickness as possible in the blade, this is not a forged knife.
